I loved this and it was super easy to make. Grab a pen (or print this out) and you'll have dinner in no time!
Ingredients
1/4 cups extra virgin olive oil
1 red onion cut into thin wedges
4 medium orange sweet potatoes, peeled and cut into 1 inch cubes (I swear this is what the recipe says despite it being for butternut squash risotto!)
2 cups risotto or arborio rice
5 cups vegetable stock
3/4 cup shredded parmesan cheese
3 tbsp shredded sage
Heat oil and cook onion 2-3 minutes until soft. Add sweet potato and rice and stir until coated in the oil. Add the vegetable stock 1/2 cup at a time, stirring until absorbed. This should take about 25 minutes to stir in all vegetable stock. Once absorbed and rice is tender,add parmesan and sage. Stir and serve, garnishing with parmesan cheese.
This was so tasty. I loved the dish and it's too easy not to make again. Question, does anyone know why they call it butternut squash but the recipe calls for sweet potatoes? Are they somehow interchangeable or did I just find a strange recipe?

I think they're interchangeable. But what do I know? I wouldn't know a butternut squash if I fell over it.
And do I leave crappy comments? All my comments have a trashcan beside them and no one else's does and now I feel all singled out and, and, *runs off crying*

Butternut squash and sweet potatoes are different things. The squash grows on a vine and the sweet potato is a root, right? Someone correct me if I'm wrong.
The younger members of my family don't like either of them that much, so I'm not an expert.
I think you can substitute them for each other...both are sweet with a similar texture, if I remember correctly, since it's been years since squash has been allowed in my house.
Ever since Frank gagged on his zucchini.....my husband and I have sneaked zucchini into our own meals for 4 years now.

That sweet potato-butternut squash thing is really bizarre to me, because they are not the same thing at all. I'm going to label this one as "Sweet Potato Risotto" on the recipe index, so as to prevent confusion. :)
